My easy and quick recipe is: tortilla rolls with cream cheese, lettuce (or any other greens) and salmon. You can always substitute salmon to any kinds of fish or lunch meat. Quick, pretty and very easy!

My favorite easy and quick recipe is bowtie lasagna from The Pioneer Woman's Tasty Kitchen. Ground meat, spaghetti sauce, sour cream, and bowtie pasta with mozzarella cheese on top. The whole family loves it!
Here is my quick and easy recipe: Take a bowl and mix diced cheese, celery, olives, onions, peppers, canned tuna and spread on hot dog rolls, bake at 425 for 15 minutes until rolls are crunchy and cheese melts. Kids eat them up!
Our favorite quick recipe is a ground meat curry from a Cooking Light Special edition magazine published years ago. It takes well to substitution and is our go-to recipe for a quick dinner.
The quickest meal ever! Shrimp scampi - a quick saute of fresh shrimp, minced garlic & onion, butter, lemon juice and white wine. Crushed red pepper and salt to taste. Serve over linguine. Sprinkle with parsley. Yum!
Whole what tortellini with pre-cooked turkey sausage, garlic, parmesan and whatever greens I have on hand - mmm
My fav quick and easy recipe: Equal parts 1/3 cup yellow mustard, mild flavor mollases, red wine vinegar. Mix ingredients and marinate chicken breast as long as you are able (5 mins or overnight still tastes great!). Broil chicken breasts till juice is clear, flipping every 4 or 5 mins as needed. Serve with cilantr-lime rice and veggies.
Spicy peanut noodles - rice sticks, PB, coconut milk, soy sauce, sriracha, curry powder, cilantro, garlic, and ginger. add shrimp, chicken, tofu and/or veggies. good hot or cold.
Cube 2 pounds steak, cook in 1 cup of fish sauce, 1 tsp of garlic, 1 tsp soy sauce. Prepare 4 cups of rice. Peel and cube 2 cucumbers add ½ cup water, 1 TBS sugar, and ¼ cup lemon juice, 1TBS pepper flakes. Plate Rice, Meat, and Cucumber Sauce.
My quick and easy recipe is grilled margarita pizza. I use wonderful store-bought herb pizza dough, tomatoes and basil from my garden and mozzarella cheese. The crust is nice and crisp and the tomatoes and basil are lightly covered in melty, gooey, cheesy goodness. Tastes like summer!
My easy and quick recipe is: Garlic chicken sausage and whole wheat pasta with summer squash and spinach. Precooked sausage and diced squash brown quickly and spinach wilts in a flash. Alter the sausage flavor, pasta shape or veggie and add a sauce for weeknight variety. Versatile, healthy and quick!
I just made this dish last night and it was spectacular! Heat frozen shrimp for 5 minutes and mix with chopped red onion, yellow pepper, halved grape tomatoes, avocado, olive oil, minced garlic, a sprinkling of feta, fresh squeezed lemon and a bit of pepper. I placed on a bed of spinach and dug in. It was light yet filling.
Guiltless Pizza
Top a fresh whole wheat pita with zesty marinara, low-fat mozzarella, your favorite crunchy fresh vegetables,and some savory garlic. Bake at 350 for 10 minutes! Top with fresh fragrant herbs such as fresh basil or tasty oregano!Smells wonderful! Indulge without the post pizza box regret!
8oz. orzo cooked and cooled
mix in:
chopped cucumber
fresh dill chopped
a little light mayo and plain yogurt (abt a 1:3 Tbsp ratio)
salt and pepper to taste
throw in some leftover cooked chicken for a meal
I remember eating this in summertime in Poland :)
Gather:
4oz fresh salmon filet per person
Tomato Sliced
Basil Pesto
Thawed Puff Pastry--cut 4 rectangles per sheet
Salt and Pepper
Bake Puff Pastry and Salmon in oven

My favorite fast dish is Ina Garten's Linguini With Shrimp Scampi recipe. It is so flavorful and very easy. I always have frozen shrimp in the freezer and pasta in the pantry, so when I need something fast this is my go to dish. Simple ingredients make it easy to make: butter, olive oil, garlic, lemon zest and juice, pasta, shrimp, parsley and freshly grated Parmesan cheese. I always have all of these in my kitchen and it goes together so easily. You can warm up some garlic bread in the time it takes to make this too if you like.
I'm posting one of my favorite desserts to make during the summer that my friends love. Low fat vanilla and peach yogurt, sugar, peaches and pomegrante blueberry juice. Mix these together and makes an excellent frozen yogurt to die for.
HOLLOW OUT LARGE TOMATO
FILL WITH EGG WHITES SALT AND PEPPER
CHOPPED ASPARAGUS, CRIPED PROCUITTO AND GREEN ONIONS CHOPPED.
BAKE IN SHALLOW PAN AT 375 DEGREES UNTIL TOOTHPICK COME OUT CLEAN
Saute some garlic and red pepper flakes. Add frozen peas. Once peas are heated through toss with cooked shrimp and angel hair pasta, olive oil, a little lemon, and parmesan. Done!
Dredge tilapia fillets in your favorite spices (I like cumin and corriander) and pan sear. Cut up a couple of mandarin oranges and add to a mixture of 2 Tbsp lemon juice and 2 tsp Siracha chili sauce. Add some fresh cilantro. Top the fish with the sauce. It's the perfect blend of sweet and spicy. Quick, easy, inexpensive, and the ingredients are versatile. Usually serve with green beans. I adapted this from a couple of recipes on the Food Network.
Back in the day, when all of us were together, one of my roommates would make this shrimp pasta dish that is quick and easy. Pasta (we would use angel hair), shrimp (frozen,medium-sized), minced garlic (about 1 tbsp), jar of basil pesto, small can of black olives, small jar of sundried tomatoes, capers and feta cheese. Cook pasta as directed. While pasta is cooking cook shrimp and add garlic. Then add all ingredients together in large bowl and mix well. Serve with crusty bread.
Herbed Chicken (CL Superfast Suppers!). Pound a few chicken breasts and season with salt and paprika, cook in a sprayed pan. In last few minutes, add a mix of a T softened butter, Italian seasoning, salt and pepper. It coats the chicken wonderfully. You would never know it is healthy cooking!
Rice noodle dish: Combine ¼c fish sauce w/½c chic broth, add Bragg’s liquid aminos, 1T hot curry. Julienne Napa cabbage, carrots, celery, gr. onion (12 oz total). Scramble an egg. Soak 8.8oz noodles. Blanch all veggies, then shrimp, combine all and season to taste with fish sauce mixture. My fav!
