ChikenTonight Vegetarians, look away. For the rest of you, I give you the almighty, weeknight wonder: chicken. It never ceases to amaze me just how popular chicken recipes are for our readers, and with good reason. Chicken is an excellent source of protein, is extremely versatile, and, when prepared correctly, quite delicious. Every month, chicken rises to the top as the most-searched term on our site. Seriously. In December chicken beats out cookies. In November it beats out sweet potato casserole and stuffing.

But we've all done a disservice to the almighty bird at some point in our culinary lives, right? While a juicy roasted chicken is sublime, the line to dry and chewy is a long, hard fall. I've been there, done that. Thankfully, the right techniques and a few flavorful ingredients are all you need to make delicious chicken.

In a new Cooking Light cookbook, Chicken Tonight!, editors have gathered the best quick chicken recipes. A weeknight dream! We've also collected 100 of our favorite chicken dishes in our Weeknight Chicken Recipes online collection. And in the October issue of the magazine, the editors offer delicious 5-Ingredient chicken dishes from across the globe, including Greek-Style Skewers and Vietnamese Stir-Fry. All this is in effort to give you what you want: delicious chicken recipes.

Today we're giving away a copy of Chicken Tonight! Here's how it works:


Step 1: “Like” us on Facebook (use the Facebook box to the right and click “Like” if you don’t already like us).

Step 2: Describe for us here in 50 words or less your favorite chicken dish. Entries should be typed into the comments field of this blog post. Entries are due by Monday, September 27 at 11:59 a.m. EST.

Editors will select their favorite based on originality, creativity, and how well you address our question. Winner will be notified via email by October 1, 2010. For full contest rules, click here.

    I’ll write about my husband’s favorite chicken recipe-Ritz Chicken. He loves it so much that he makes it. He loves this dish because the ingredients are: chicken breast, sour cream, ritz crackers and some butter. Not exactly light (but can be lighter if you use light sour cream and less butter on top and perhaps light ritz crackers). But it is nice and crunchy.

    Chicken thighs roasted with chicken broth, lemon juice, smashed garlic cloves and fresh rosemary. Thicken pan juices with wondra flour for a great gravy.

    My mom’s DelMarVa chicken: Dot pieces with butter, top with honey and white wine, and bake. Serve over rice. Want lots of sauce? Use lots of honey, butter and wine. (I’ll also add fruit — apples, oranges, grapes, whatever — before baking.)

    My families favorite chicken dish is Pizza Chicken! It is quick to make with only 4 ingredients! It can be thrown together in a jiffy and bakes in a 1/2 hour. Throw a salad and some bread with it and you have a VERY quick meal! YUM!

    My family’s favorite Chicken Dish is Asian Barbeque Chicken. It’s boneless skinless chicken thighs marinated overnight in LS Soy Sauce, crushed red pepper, brown sugar, lime juice, curry and garlic. Then cooked on the grill while basting with the cooked marinade. Our all-time favorite with rice and a salad!!!!

    Classically simple – Chicken Picatta. Chicken breasts pounded flat and seasoned with salt and pepper, sautéed with olive oil. The magic is in the incredible sauce: remove the cooked chicken and keep warm while lemon juice, vermouth and capers pick up the pan’s browned bits and condense down to wonderful goodness!

    My favorite chicken recipe is adapted from a chicken enchilada recipe from Cooking Light, August 2001. It uses a tomatillo based sauce instead of a red sauce. Yummmm!

    CHICKEN TIKKA MASALA! My daughter really got into Indian take-out food. Never having cooked Indian food before, I found a great recipe and perfected the dish. My daughter LOVES it! And it saves us alot of money on take-out!

    I love use skinless boneless breast, cut a pocket into it and stuff it w/ mozzarella and onions/garlic i sautéed. Roll it in bread crumbs and bake it. I top it w/ sundried tomatoes, basil and what ever else I have on hand I want to add.

    Chicken spaghetti with a twist! (my daughter named it:) chicken breast seasoned with garlic & pepper. can of diced tomatoes. slivered almonds, chickpeas, cayenne pepper, garlic, pepper, chives, spinach, mix it all together on the stove with spaghetti noodles & serve warm. top with shredded asiago cheese super yummy!

    Chicken Parmegian is the best, i love the dredging in flour/egg/breadcrumbs and how quickly it cooks up. A slight crunch and then into juicy tender chicken. It’s a C.L recipe also! It’s my goto dish for friends and family!

    Chicken Paprikash is my favorite chicken dish. It reminds me of being a kid again in my Mother’s kitchen while she was preparing this dish she learned from her father. The smells of the chicken and paprika cooking brings back memories of their love of good food and family.

    My favorite chicken recipe is putting chicken in the slow cooker, season it, add spaghetti sauce and let it cook for 6 hours, then I cook spaghetti noodles. When the chicken is done, put noodles on plate and put chicken and sauce over it. Serve with salad and optional Italian bread. My family loves when I cook this

    Our family favorite is to take the seasoning from the Cooking Light recipe for Cajun Flank Steak and use it on chicken breasts. We flavor five or six breasts, grill them, then use throughout the week in salads, tacos, and even on pizza.

    This is a fav that I learned from my mom: chicken thighs marinated in teriyaki sauce for 30+ minutes, then thrown on the BBQ. A side of carrots, cabbage, and whatever steamed with some teriyaki sauce. Rice. Hawaiian BBQ, all you need is a Longboard Lager to go along with it.

    My favorite is to lay out a sheet of foil, spray with nonstick spray; take slice potatoes and make a one serving mound, place a chix breast on top sprinkled with taco seasoning and then mexican cheese. Wrap up and bake at 350 for 45 minutes. Serve with taco sauce and sour cream. Easy cleanup.

    It’s hard to choose just one, but I think my favorite chicken dish is the honey mustard “fried” chicken from Cooking Light. It was baked, not fried, but has a wonderful cornflake coating like fried chicken. I haven’t made it in years but it is SO delicious!

    Take a boneless, skinless chicken breast and make a slit in the meatiest part. Fill with a ricotta, mozzarella, basil, Italian season mixture. Secure with a toothpick. Top with marinara sauce and bake for 25-30 minutes in a 350 degree oven. Top with mozzarella and fresh basil. Bon appetito!

    My favorite way to cook chicken is to “stir fry” it with peppers and carrots and serve it over pasta. I use olive oil for the “sauce” and lots of garlic! Top with Parmesan cheese!

    I adore a good roasted chicken panini! I like to mix it up, but my favorite is chicken, goat cheese, coarse grain mustard, mushrooms and spinach. Yum, yum, yum.

    fav way to cook is panko crusted bread crumbs, and bake it…quick and easy, we also marinate it with a tasty mango salad dressing sometimes for a diff. taste and bake it…YUM

    My favorite Chicken recipe, especially on a week night. Would have to be made in 45 minutes or less, preferably only dirtying 3 or less pots, and something that both my ever so picky husband and 2 yr old want more of! Off the top of my head I’m thinking Chicken Alfredo or Chicken Parm, my boys are big fans of Sauces and Cheese!!

    I make a lower fat chicken casserole with broccoli, rice, and cheeses that freezes beautifully so I make it in a huge pan to cut into portions for freezing. Perfect for days I don’t feel like cooking. Hint: make the rice w/chicken stock!

    My favorite way to cook chicken is to dredge it in store-bought pesto sauce and then cover it in bread crumbs. Brown it in a pan with olive oil and then finish cooking in the oven. It’s fantastic and so easy!
