Chocolate Cupcakes for TwoSometimes you just really, really need some chocolate. I was having one of those days recently when I came across the perfect recipe for my dilemma: Chocolate Cupcakes for Two from Faith Gorsky’s blog An Edible Mosaic—a Cooking Light Bloggers’ Connection member. This recipe was incredibly easy, it used ingredients I already had on hand, and—best of all—it resulted in a rich, moist, and oh-so chocolatey treat. Knowing my sweet tooth, I usually can’t stop at just one, so this recipe offered the perfect amount of portion control: one for me and one for my husband. And both of us agreed—they were totally satisfying.

    I question the wisdom of using fuel to heat a whole oven for just two cupcakes. Every time you get the urge you’re going to heat it again? How wasteful is that! It would be much kinder to the planet to make a panful, then freeze the extras for future whims.
