Matzo

When it comes to finding creative ways to dress up a dry piece of matzo (imagine cardboard, only slightly less tasty), I’ve tried it all. Matzo pizza. Matzo tuna cheese melts. Matzo (turkey) BLTs. I remember packing matzo PBJs in school, only to have it shatter into sticky shards before lunchtime. But I also love the satisfying crunch, and a box of matzo always lets me know we’re on the verge of spring.

Think of matzo like a large, sturdy cracker—it can stand up to spreads and a few toppers, but a triple-decker sandwich would most likely crumble. If you keep kosher, remember that many kinds of matzo are NOT kosher for Passover (they may contain a fermented grain or have undergone some leavening). Look for the approved seal on your package.

My favorite toppers: 

Matzo bagel: A thin layer of cream cheese, lox, and a sprinkle of bagel seasoning (poppy seeds, sesame seeds, garlic flakes, or caraway seeds).

Sweet and simple: A thin layer of butter with a sprinkle of cinnamon sugar.

Turkey melt: Canola mayo, turkey, apple, and shredded cheddar cheese. Pop in the toaster oven or under the broiler until the cheese melts.

Hazelnut, Strawberry, Banana: Go classic crepe and spread with chocolate hazelnut spread; top with sliced bananas and strawberries.
