Kung Pao Chicken: Slash calories and sodium by making the takeout favorite at home.

To pay homage to Congress’s riveting game of chicken this week, I’ve compiled eight of our top-rated chicken recipes for you. After all, we’re going to need some help coping with the loss of the National Zoo’s Panda Cam… and cooking chicken seems as good a way to ease the pain as any.

I’m glad folks up on the hill at least waited until after meatless Monday to get this cock fight going. Thanks, guys.

1.) Quick Chicken-Corn Chowder. Perfect for the chillier nights coming our way, this wholesome chowder is rich, comforting, and comes together in under 30 minutes.

2.) Kung Pao Chicken. What a mighty fine time to celebrate other cultures. This lightened favorite packs a powerful punch of flavor and can be on your table in less time than it takes to pick up take-out.

6.) Chicken Enchiladas with Salsa Verde. Brightened with lime, fresh cilantro, and prepared green salsa, our Chicken Enchiladas are a vibrant meal to remedy any lackluster day… say the day your garbage collection stops. Sorry, D.C.

7.) Chicken Tagine with Lemon and Olives. Maintaining the deep flavors of traditional Moroccan stew, our test kitchen staff has simplified the dish replacing preserved lemons with lemon rind and cutting down the simmer time. Rich and saucy, the final product is heaven blanketed over a bowl of couscous.
