The How-To Guide: Prep Chanterelle Mushrooms

Chanterelle mushrooms are an important part of Alain Ducasse’s Butternut Squash with Wild Mushrooms and Crispy Bacon. Here, how to prepare the delicate chanterelles for the dish.

1. Clean: Use a damp cloth or paper towel to gently brush any dirt or woodland debris from the wild mushrooms.

2. Trim: Cut up to 1/4 inch from the bottom of any stems that appear discolored, soggy, or not completely fresh.

    I just bought 3# of chanterelles at Costco. What a find! At any rate, cleaning them under a slowly running tap was difficult enough as one has to clean each mushroom. Using a damp paper towel would take way too long.
