Five on Friday: 5 Ways to Celebrate World Egg Day

Each Friday, we share five things that are getting buzz around the Cooking Light offices—from what we’re reading around the Web, to what’s hot on Instagram, or even our latest favorite ingredient.

Happy World Egg Day, everyone! OK, ok, it’s a bit of a silly holiday but it gives me an excuse to celebrate one of my favorite foods. I eat them (scrambled) almost every morning for breakfast—especially on weekdays. Paired with a slice of whole-wheat toast, it’s the perfect protein-carb combo for breakfast. But I also love them hard-boiled, fried, as omelets, quiche, frittatas, the list goes on. Here are five of my favorite ways with eggs.

quiche

1. Summer Squash, Bacon, and Mozzarella Quiche: Is there anything better than quiche? Creamy, savory goodness in a pie crust: Perfection. And this recipe has bacon.

Baked Egg-in-a-Hole

2. Baked Egg-in-a-Hole: I’ve mentioned before that this one of my favorite breakfast treats. It makes breakfast seem special without much effort.

Classic French Omelet

3. Classic French Omelet: Simplicity at its best: The finished omelet should be golden outside and unbrowned, while still creamy at the very center. Here’s how to make the classic French omelet.

Deviled Eggs with Pickled Onions

4. Deviled Eggs with Pickled Onions: We love our deviled eggs in the South and these beauties are only 76 calories per serving (two halves!).

Shakshuka

5. Shakshuka: Straight out of our upcoming cookbook, Lighten Up, America!, Shakshuka is an Israeli dish that is becoming increasingly popular across America. Serve spoonfuls of the spicy tomato-and-pepper sauce over rice.

So, what’s your favorite egg dish?
