Sunday Strategist: A Week of Healthy Menus — November 11-15

Here, another week’s worth of fast, healthy, and tasty menus. It’s not the dread of cooking that deters so many of us from the kitchen each night; it’s actually deciding what to cook from the millions of options bombarding us from so many different places. Here, we’ve done the planning for you. Not just menus, but healthy menus that are fast – on the table in less than 45 minutes.

The Plan
Monday: Poached Eggs with Spinach and Walnuts and Roasted Acorn Squash
Tuesday: Creamy Carrot and Sweet Potato Soup with Arugula Tomato Salad
Wednesday: Fennel and Spinach Salad with Shrimp and Balsamic Vinaigrette
Mid-week Drink Bonus (for those of you over 21)! Warm Spiced Cran-Pom Toddies
Thursday: Easy Stovetop Mac and Cheese and Orange-Sesame Broccoli
Friday: Pan-Seared Chicken Breast with Rich Pan Sauce with Oven-Roasted Green Beans
Dessert Bonus: Coffee-Drenched Ice Cream with Banana and Peanuts

Monday: Happy Meatless Monday! Start your week with a simple, flavorful veggie-forward meal: Poached Eggs with Spinach and Walnuts and Roasted Acorn Squash. Start by sautéing some acorn squash in butter and popping it in the oven. While you’ve got your squash roasting, start on your stovetop ingredients, sautéing your mushrooms and poaching your eggs. In just about 40 minutes, you’ll have a nice, rustic, healthy dinner on the table.

Tuesday: Make our Creamy Carrot and Sweet Potato Soup and let the flavors meld as long as you can before serving. It’s beautifully seasonal, well spiced, and super comforting. Serve with a fresh, crisp, Arugula-Tomato Salad.

Wednesday: Whip together this Fennel and Spinach Salad with Shrimp and Balsamic Vinaigrette for a tasty meal, with your weekly serving of Omega-3-rich seafood. Quick, fresh and light, makes for a happy meal-maker and happy eaters. Drink bonus: Knock out those mid-week blues with a Warm Spiced Cran-Pom Toddy.

Thursday: As we roll into Thursday, nothing hits the spot better than comforting, cheesy, Easy Stovetop Mac and Cheese. Add a side of Orange-Sesame Broccoli for a well-rounded meal. Then set your eyes on the prize: Friday is just a few hours away.

Friday: You’ve made it through another week. Spend a little time in the kitchen perfecting your pan-sauce technique with this Pan-Seared Chicken Breast with Rich Pan Sauce recipe from our November 2013 issue. A quick side of Oven-Roasted Green Beans allows you to keep your attention on making the perfect sauce.

After, indulge in a serving of Coffee-Drenched Ice Cream with Banana and Peanuts. It’s ready in just 7 minutes, which leaves you plenty of time to relish in the feeling of a week well done.

    Wow, those are some great healthy options for a weekly menu. Thanks for this. I know for me personally, it’s always hard to figure out what I’m going to eat through out the week. Having a guide like this helps with actually going grocery shopping and knowing what to get.
