Peak Season: Comice Pears

Beneath thin skin lies amazingly flavorful, buttery flesh. Handle gently to avoid bruising.

These pears are drippingly juicy and sugar-sweet, their flavor full of complex floral and spice notes. Perfect for eating out of hand, they also make fantastic fall salads.

Combine 1½ tablespoons olive oil, 1 tablespoon white wine vinegar, 1 teaspoon chopped fresh thyme, ¼ teaspoon Dijon mustard, ¼ teaspoon honey, and 1/8 teaspoon salt in a bowl, stirring with a whisk. Combine 4 cups mixed salad greens, 2 cups thinly sliced Comice pear, 1 cup thinly sliced Belgian endive, and ¼ cup chopped toasted walnuts in a large bowl. Drizzle vinaigrette over salad mixture; toss to coat. Sprinkle with 1 ounce crumbled blue cheese.
