Sunday Strategist: A Week of Healthy Menus — March 24-28

We’re digging right into spring with fresh, easy-to-make meals that will be out of the oven and on your table in less than 45 minutes. With repeating items like peas, radishes, and arugula, hopefully we can help keep your grocery lists to a manageable size. So cheers to sunny weather, bike rides, and a new season of produce (goodbye, long, cold, winter!)

The Plan:
Monday: Pasta with Lemon Cream Sauce, Asparagus, and Peas
Tuesday: Chicken with Provençal Sauce and Radishes in Browned Butter and Lemon
Wednesday: Mussels with Peas and Mint and Quick Chive Mashed Potatoes
Thursday: Chicken, Arugula, and Radish Pizza
Friday: Asparagus and Lemon Risotto
Dessert bonus: Strawberries Romanoff Sundaes

Meatless Monday: Start of your week with this bright, fun pasta dish. If you’re cooking for 1 or 2, this holds well and packs along for tasty, no-effort lunch leftovers on Tuesday. And it all rings in at 351 calories–a great start to the week! This would be great with a simple arugula and tomato salad; use some from the bag you’ll be using later this week to make a delish pizza.

Tuesday: Garlicy, herby, and rich, our Chicken with Provençal Sauce makes for a satisfying meal. Paired with rustic, browned butter radishes, you’ll know it’s spring. You’ll appreciate radishes in a whole new way, and this meal, that pulls together in less than 45 minutes will have everyone at the table saying, “Wow!”

Wednesday: Besides radishes, what screams spring? Peas! Try peas in this super fast one dish meal. This one is refreshing, just what you need mid-week. Serve with quick chive mashed potatoes.

Thursday: Radishes on pizza? Why not! I had this one in the Test Kitchen when it was being developed, and I have to tell you, it’s quite tasty. The radishes lend a crispness that pairs well with three things that already go great on pizza: chicken, goat cheese, and arugula. Eat two slices, and celebrate that you just had pizza for 407 calories!

Friday: Rejoice! You’ve made it to Friday, and it’s time for your dessert bonus. But first, dinner. On tonight’s menu is an easy peasy, slightly magical recipe from last year’s May issue: Asparagus and Lemon Risotto. It’s oh so rich and creamy, no one will ever need to know it doesn’t have the calories of a full-fat risotto. And you know how we got a little “out there” with the radishes on pizza this week? Well, this indulgent recipe is cooked up in the microwave! You heard right–the microwave! So get pumped, because it’s delicious and leaves you just one pot to clean up on Friday night, so you can rush ahead to your Strawberries Romanoff Sundaes, with the first juicy strawberries of the year.

    I’d love to be able to get these menus via email – I love reading them and they keep me tuned into the magazine so well. Or add an easy link in the regular emails I already get…anything to keep this front and center would help.
