Wow! You’ve Got to Try This—Grown-Up Jellied Desserts

Wow your dinner party guests with grown-up parfaits that feature rich, silky pudding topped with a decadent boozy layer. Check out the video to see how to make them.

 

MOCHA PUDDING WITH RED WINE JELLY

Use the Mocha Pudding recipe, but chill it instead of serving it warm.

Red Wine Jelly:
2 teaspoons unflavored gelatin
2  tablespoons water
1 cup syrah, zinfandel, or other spicy, fruity red wine
2 tablespoons sugar

1. Make pudding and chill until set.

2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.

3. Combine wine and sugar in a small saucepan; bring to a simmer, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.

CITRUS PUDDING WITH TEQUILA JELLY
Make Citrus Pudding, omitting whipped cream.

Tequila Jelly:
2 teaspoons unflavored gelatin
2 tablespoons fresh lime juice
1/2 cup water
1/3 cup tequila
2 tablespoons sugar

1. Make pudding and chill until set.

2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.

3. Combine water, tequila, and sugar in a small saucepan; bring to a simmer, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.

VANILLA BEAN PUDDING WITH APEROL JELLY
Make Vanilla Bean Pudding.

Aperol Jelly:
2 teaspoons unflavored gelatin
2 tablespoons water
1/2 cup Aperol
3 tablespoons sugar
2 tablespoons fresh lemon juice
Water to equal 11/3 cups

1. Make pudding and chill until set.

2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.

3. Combine Aperol, sugar, lemon juice, and enough water to equal 11/3 cups; bring to a simmer in a small saucepan, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.

BUTTERSCOTCH PUDDING WITH RUM JELLY
Use this Butterscotch Pudding recipe.

Rum Jelly:
2 teaspoons unflavored gelatin
2 tablespoons water
1/2 cup golden or aged rum
3 tablespoons sugar
Water to equal 11/3 cups

1. Make pudding and chill until set.

2. Sprinkle gelatin over water in a small bowl; let stand 5 minutes.

3. Combine rum, sugar, and enough water to equal 11/3 cups; bring to a simmer in a small saucepan, stirring just until sugar dissolves. Stir in gelatin mixture; heat over medium-low heat just until gelatin dissolves. Cool slightly; pour about 1/4 cup gelatin mixture over each serving of pudding. Chill until set.

    Doesn’t heating the alcoholic beverage remove all the Alcohol content of this dish.. What if I want to serve a REAL Grown up dessert, Alcohol in tact?? Maybe I should ask my grand daughter. She makes Jello Shots, and Pudding Shots for her parties, with alcohol intact in them… lol

    I had the same question as also making right now. I sprinkled the gelatin over the lime juice and put the water in the saucepan with the tequilla and sugar, then added the lime gelatin. Don’t know yet if it worked or not!! Lets hope so. Also the pudding without the cream was way too thick so I put it back into a saucepan and added milk to thin the pudding down as I did not have cream in the house. Chilling at the moment before putting jelly on top!

    Citrus pudding with tequila jelly: Should the gelatin be sprinkled over the lime juice instead of over the water, as the recipe has it? If not, when does the lime juice get added? Also, recipe says combine water, tequila, and sugar. If that’s right, how much water, since the gelatin was sprinkled over the water?
