5 Simple Sides for Homemade Freezer Pockets

Last-minute meals are the cornerstone of my weeknight meals. With minimal planning, you are on your way to a delicious dinner with plenty of time to relax before bed. (Or watch too many episodes of Criminal Minds.)

The Homemade Freezer Pockets that our Test Kitchen whipped up are the epitome of genius meal planning. Premade by you days or weeks before, all you have to do is pop them in the oven for 20 minutes. And voila! Dinner is served!

 

Let’s call these pockets what they really are, shall we? They’re calzones – beautifully cheesy and ready to be eaten calzones. So while these puppies are in the oven, whip up one of these quick sides for a weeknight dinner worth shouting about.

Sautéed Broccoli Rabe: Packed with vitamins A, C, and K, this nutritious green will be ready in less than 10 minutes.

Spinach Salad with Berries and Goat Cheese: The perfect “throw whatever you have in the fridge” kind of salad.

Sautéed Almond Green Beans: While your pockets are cooking below, throw these beans on top for a quick and delish side.

Grilled Zucchini Caprese Stacks: Since we agreed these pockets are actually calzones in disguise, you might as well keep it Italian for your side dish.

Grilled Green Onions with Lemon and Parmesan: The heat from the grill brings out the sweetness in one of my favorite side dishes.
