Want an easy 3-ingredient ice cream? Chill a 12-ounce can of evaporated milk and then whip it with 1 cup of powdered sugar and 2 teaspoons of good vanilla extract until almost doubled in size. Stick the bowl in the freezer for 1 hour and then whip it again. Repeat this 2 more times and you will have a delicious low-fat ice cream every bit as great as the best soft serve in your local ice cream store. If you prefer lemon, finely grate the rind and use the juice of 1 small lemon, reduce the vanilla extract to 1/4 teaspoon, and follow the above method for creamy dreamy lemony ice cream.
