January is the month of exciting changes and opportunity. In that light, we’ve put together 5 staff faves that you need to cook this month. Each is unique and different so you’ll either get to try a new ingredient, a new process, or a totally different flavor profile than what you may be used to (savory granola, anyone?). Apple-Sunchoke Salad with Smoked Trout and Cider Vinaigrette: Turns out, smoked trout, apples, and sunchokes are made to go together.


Savory Granola: Meet your new granola, which has two-thirds less sugar than most store-bought varieties. We like it with a little extra kick, but knock the red pepper back for less heat. Stir into yogurt, sprinkle over fresh fruit, or toss into salads.


Butternut Squash Queso Fundido: For your next bunko party or even your famous Super Bowl Party, put out a bowl of our Butternut Squash Queso Fundido. This cheesy snack sports two-thirds less fat than the classic dish and gets extra richness from butternut squash.
