Sunday Strategist: A Week of Healthy Menus—January 18-22

Every Sunday, we publish a week of Cooking Light dinner plans filled with our favorite recipes—both from current issues and classics. Each meal is designed to be ready and on the table in 45 minutes or less so that you have more time to enjoy the food you’ve prepared and the company of those you’ve prepared it for.

The Plan
Monday: Skillet Chicken with Seared Avocados + Orange-Jicama Salad
Tuesday: Loaded Mashed Potato Soup
Wednesday: Linguine with Clams and Fresh Herbs + Radicchio Caesar Salad
Thursday: Tomato-Asiago Frittata + Arugula and Blueberry Salad
Friday: BBQ Pizza with Slaw 
Fruity Bonus: Afternoon Pick-Me-Up

Monday: Kick off the week with super speedy Skillet Chicken with Seared Avocados. This year, we’re encouraging a balanced diet low in added sugars, but the tiniest bit of sugar helps the avocado halves char in the pan, adding robust toasty flavor. Orange-Jicama Salad is a great way to wake up this comforting winter meal.

Tuesday: Nothing beats cuddling up with a warm bowl of Loaded Mashed Potato Soup on a chilly night. Buying prechopped onion and minced garlic makes this meal quicker than ever. Believe it—in just 30 minutes you’ll have a delicious made-from-scratch dinner.

Wednesday: There is more to pasta night than a jar of marinara—much more. Serve Linguine with Clams and Fresh Herbs, an Italian-inspired dish featuring quick-cooking noodles and clams in a light, fresh white wine sauce. Keep the side simple with a fresh, crunchy Radicchio Caesar Salad.

Thursday: Tonight, everyone can have their way! Customize the Tomato-Asiago Frittata—essentially a large, crispy-bottomed omelet—with any vegetables, fresh herbs, or cheeses you like. Pair with Arugula and Blueberry Salad for a fruity, nutty, anything-but-boring side.

Friday: Fridays and pizza are synonymous. Skip delivery and make your own fast BBQ Pizza with Slaw with the help of supermarket rotisserie chicken and store-bought thin pizza crust. Sweet, tangy, and spicy come together in a flash—what more could you ask for?

Fruity Bonus: Whenever you’re starting to slump throughout the week, snap out of it with Afternoon Pick-Me-Up craveable combo of invigorating jalapeño, refreshing pineapple, and sweet beets, which naturally increase blood flow to the brain.

    Love the recipes for a week; I look forward to them every Sunday.

    I understand that you need sponsors, but there are so many things trying to load and/or cover the page that it’s very difficult to read the recipe. I also haven’t been able to read reviews for a while – I click on them, but nothing happens.
