We’ve assembled a task force of staff from our Birmingham offices, which include sister brands Southern Living, Coastal Living, MyRecipes, and Oxmoor House, to try the Cooking Light Diet for 3 months and blog about it. Here’s what they’re saying.
One thing that really bothers me is throwing away good food. Whether it’s fresh ingredients left to languish too long on the counter or in the crisper, or tasty leftovers that get hidden in the back of the fridge, tossing once-good food into the trash makes me feel lazy and, if I’m honest, pathetic. People in this country and around the world are going hungry, and I can’t expend the mental bandwidth to remember I have an avocado on my counter? Shameful.
I was worried during my first Cooking Light Diet shopping list. I ended up with lots of fresh herbs that I only needed a pinch of, plus lots of half tomatoes, odd bags of potatoes, and heels of bread.
Being the less-than-creative-in-the-kitchen sort (I’m a recipe and rule follower in general!), I started thinking of recipes I could find to finish up these perfectly good ingredients, then I realized that the Diet does it for me—I just set my preferences to bring in more recipes with similar ingredients, favorite the recipes that use them, and it does the rest.
That means I don’t have to figure out how to use a spring of thyme before it goes bad, and for me, that’s a huge victory.
