Planning ahead has never been something I’m good at. I’m more a fly-by-the-seat-of-your-pants kind of girl. Life never gets boring if you don’t know what you’re going to do tomorrow. The problem with that mentality has trickled over to my diet, however. Luckily the Cooking Light Diet has come to the rescue in that regard.
For breakfast I will snag a hard-boiled egg, banana, and a spoonful of peanut butter as I’m running out the door. But by the time I got to work I had nothing planned. Money is also hard to come by as a recent post-grad, so I resulted to eating raw almonds and stale popcorn for lunch too many times.
In walks the new love of my life–Sundays. Who knew that this day would suddenly become my favorite? What used to be filled with days of homework has now been filled with making a different stew or chili every week. That’s what’s for lunch for that week. I go into my Cooking Light Diet account in the middle of the week and check out if I have any soups that need tasting or stews that need gobbling. I choose a favorite and spend my Sunday shopping, cooking, and relaxing.
Last Sunday was a Beef and Guinness Stew (above), which was to die for. The only adjustment I made was replacing Guinness with my home state’s favorite brewery. I love you Founder’s Brewery.
