Sunday Strategist: A Week of Healthy Menus—February 8-12

Every Sunday, we publish a week of Cooking Light dinner plans filled with our favorite recipes—both from current issues and classics. Each meal is designed to be ready and on the table in about an hour so that you have more time to enjoy the food you’ve prepared and the company of those you’ve prepared it for.

The Plan
Monday: Peppered White Bean, Kale, and Egg Stack
Tuesday: Shredded Pork and Pinto Tacos with Pepita Slaw and Avocado-Radish Salad
Wednesday: Hamburger Steaks with Sweet Onion and Mushrooms and Roasted Broccoli with Garlic and Lemon
Thursday: Chicken Cordon Bleu Grilled Cheese Sandwiches with Garlicky Spinach
Friday: Mussels with White Wine and Leeks with Endive Salad with Pear and Gorgonzola
Cocktail Bonus: Pomegranate Fizz

Monday: A power-packed, one-dish dinner is exactly what a Monday demands–and this Peppered White Bean, Kale, and Egg Stack delivers. Creamy, fiber-packed white beans team up with nutrient-dense kale and a delightful runny egg for a hearty, flavorful–and frankly, beautiful– vegetarian dish. A sprinkling of leafy herbs for bright, fresh flavor and some Parmesan for a salty-savory kick are the perfect finishing touches. Serve with a hunk of  buttered whole-grain toast, and you’re ready to take on the week.

Tuesday: Oh hey, taco Tuesday. The succulent shredded spiced pork is great, but the accouterments are arguably what make these vibrant Shredded Pork and Pinto Tacos. Pumpkin seeds provide just the right amount of added crunch and nutty substance to the bright, tangy cabbage slaw; added bonus, the pepitas make for an awesome snack or salad topper, so enjoy munching on those this week. And the creamy avocado-yogurt spread is a too-easy-to-taste-this-good condiment you’re going to come back to again and again. Grab an extra avocado while shopping  for a super simple tossed Avocado and Radish Salad to compliment the tacos.

Wednesday: Saucy, cheesy, beefy… all such wonderful adjective, wonderful adjectives that describe your humpday dinner. Hitting the height of comfort food, these Hamburger Steaks are smothered in Gruyère cheese and a cremini mushroom and onion sauce that makes this meal so worth looking forward to. Get some green on the plate with a side of garlicky broccoli.

Thursday: If you thought you loved Gruyère last night, just wait until you try it in the context of these toasty, gooey Chicken Cordon Bleu Grilled Cheese Sandwiches. A quick side of sauteed spinach is all you need to round out the plate.

Friday: You made it! Celebrate the start of the weekend with a meal that feels elegant to eat, but easy to make. You only need 5 ingredients and 20 minutes Mussels with White Wine and Leeks. Be sure to pick up a loaf of crusty bread–this savory broth is made for sopping. Offering a little bit of sweet and a little bit of funk, an Endive Salad with Pear and Gorgonzola is just the salad to round out the meal.

    I really like the Strategy menu and also enjoy your cookbook called Cooking Light Dinner Tonight. What I enjoy about the meals In The book is that it includes recipes for sides as well as a healthy dessert option which is such a help with children. What I wish it had was an option of seasonal menu plans for me with my busy schedule. Have you considered adding this to your menu plans online for busy families like mine who want to eat healthy?
