Monday: A power-packed, one-dish dinner is exactly what a Monday demands–and this Peppered White Bean, Kale, and Egg Stack delivers. Creamy, fiber-packed white beans team up with nutrient-dense kale and a delightful runny egg for a hearty, flavorful–and frankly, beautiful– vegetarian dish. A sprinkling of leafy herbs for bright, fresh flavor and some Parmesan for a salty-savory kick are the perfect finishing touches. Friday: You made it! Celebrate the start of the weekend with a meal that feels elegant to eat, but easy to make. You only need 5 ingredients and 20 minutes Mussels with White Wine and Leeks. Be sure to pick up a loaf of crusty bread–this savory broth is made for sopping.
