Wake up call! We’re more than halfway through Winter, and some of the best ingredients for delicious, fulfilling salads will soon be out of season. And you know what else? Bathing suit season is just around the corner. No worries! Whip up any of these salads and you’ll solve both of your problems.


Winter Salad with Roasted Beets and Citrus Reduction Dressing: Two natural wintertime partners illustrate the perfect example of opposites attracting: meaty, earthy beets, and light, bright, citrusy oranges.


Roasted Sweet Potatoes with Cranberry-Chipotle Dressing: Thanksgiving flashbacks (the good kind) are bound to happen with this salad. Luckily, chipoltle’s smoky heat will be the warm, smoky hug that eases you back to reality.
