Sunday Strategist: A Week of Healthy Menus—May 16-20

Every Sunday, we publish a week of Cooking Light dinner plans filled with our favorite recipes—both from current issues and classics. Each meal is designed to be ready and on the table in about an hour so that you have more time to enjoy the food you’ve prepared and the company of those you’ve prepared it for.

The Plan
Monday: Soba-Edamame Noodle Bowl and Seared Baby Bok Choy
Tuesday: Strawberry-Chicken Salad with Pecans and Toasted Farro with Thyme
Wednesday: Cajun Shrimp Linguine and Lemony Broccoli Spears
Thursday: Springy Chicken Soup and Simple Gruyére Toasts
Friday: Steak and Mushroom Pizza-dillas and Blistered Asparagus
Cocktail Bonus: Blueberry Margaritas

Monday: This super fast Meatless Monday Soba-Edamame Noodle Bowl comes together in under 10 minutes. Pair that with perfectly caramelized Seared Baby Bok Choy and you’ve got a dinner with an international flair on the table in under 20 minutes.

Tuesday: Strawberries, in their peak season, are the real stars of this fresh Strawberry-Chicken Salad with Pecans. Pair it with chewy Toasted Farro with Thyme and you’ll have a satisfying well-balanced meal.

Wednesday: Smoky seasoning and sweet shrimp coincide with the creole trinity (onions, celery, and bell pepper) to make a rich Cajun Shrimp Linguine that compliments the bright flavors of Lemony Broccoli.

Thursday: A wealth of fresh produce goes into Springy Chicken Soup to make sure there’s a variety of veggies in each bite. Simple Gruyére Toasts on the side makes for a delicious flavoring pairing, not dissimilar to a grilled cheese and soup.

Friday: Get the best of both worlds in these hybrid Steak and Mushroom Pizza-dillas that are stuffed full to bursting with gooey cheese and are just begging to be dipped into warm marinara sauce. Get some extra color in the meal with smoky-flavored Blistered Asparagus on the side.

Cocktail Bonus: Take advantage of berry season by muddling tasty blueberries straight into our refreshing Blueberry Margaritas.
